方向一:益生菌益生性質(zhì)、益生機(jī)理及其調(diào)控機(jī)制
研究內(nèi)容:開展自然發(fā)酵乳的微生物生態(tài)和功能菌種的發(fā)酵機(jī)制,開發(fā)功能性發(fā)酵乳的工業(yè)化生產(chǎn)技術(shù);發(fā)酵法制備生物活性肽,在分子、細(xì)胞和動(dòng)物水平研究其生物活性的生物學(xué)機(jī)制。

方向二:微生物環(huán)境適應(yīng)性機(jī)制及其酶的開發(fā)應(yīng)用
研究內(nèi)容:利用多組學(xué)、反向遺傳學(xué)、生物化學(xué)等多學(xué)科技術(shù)手段研究不同環(huán)境脅迫下紅酵母中油脂、多不飽和脂肪酸、類胡蘿卜素、胞外多糖等多種天然生物活性物質(zhì)合成與環(huán)境脅迫適應(yīng)性之間的關(guān)系,揭示不同環(huán)境脅迫條件下這些生物活性物質(zhì)合成調(diào)節(jié)的信號轉(zhuǎn)導(dǎo)途徑及其調(diào)節(jié)機(jī)制,進(jìn)一步結(jié)合代謝網(wǎng)絡(luò)模型構(gòu)建和代謝工程策略構(gòu)建高效生產(chǎn)不同生物活性物質(zhì)的代謝工程菌株。

方向三:人體微生物組
研究內(nèi)容:聚焦微生物組在女性生殖健康(不孕癥、HPV感染)及癌癥(甲狀腺癌、宮頸癌、結(jié)直腸癌)中的作用機(jī)制,探究分娩方式(自然分娩/剖腹產(chǎn))對新生兒腸道菌群定植及早期健康的影響,為疾病防治和母嬰健康提供新策略。

方向四:功能性發(fā)酵食品研發(fā)及其活性機(jī)制的研究
研究內(nèi)容:開發(fā)具備降尿酸、降血壓作用的發(fā)酵乳制品,調(diào)節(jié)睡眠的益生菌豆?jié){豆豉和益生性鋒產(chǎn)品,以及探究功能食品發(fā)揮益生效用的分子機(jī)制。
